Researchers from KU Leuven University in Belgium, led by Professor Kevin Verstrepen, have enlisted the help of AI to improve the taste of beer, a popular refreshment during warm seasons.

AI's Role in Decoding Flavor Preferences

Professor Verstrepen highlighted the ability of AI to decipher the complexities of human taste perception and identify common preferences based on provided data.

"Like most food and beverages, beer contains hundreds of different flavor molecules that are perceived by our tongue and nose, and the brain combines them into an overall flavor picture when we drink it," explained Verstrepen.

"However, these compounds are present in all beers, and what makes them taste different is the varying concentrations of these compounds," he added.

Comprehensive Beer Analysis

Professor Verstrepen and his team analyzed the chemical composition of 250 commercial beers available in Belgium, covering 22 different styles, including lagers, fruit beers, stouts, blondes, and non-alcoholic beers. This analysis examined beer characteristics such as alcohol content, pH, and chemical compound ratios.

The study also assessed the presence and concentrations of over 200 flavor-related compounds, such as yeast-derived esters and hop-derived terpenoids, which significantly contribute to beer flavor.

Sensory Evaluations and AI Predictions

Trained panelists tasted and evaluated the 250 beers based on 50 different factors, including sweetness, acidity, bitterness, and aftertaste.

Using the collected data, the team employed AI to predict chemical compound concentrations that could appeal to a wide range of tastes. This approach aimed to identify an ideal beer formula that satisfied the majority of consumers.

"Small changes in the concentrations of chemicals can have a major impact, especially when multiple components start changing," noted Verstrepen. He emphasized that certain compounds produced during traditional brewing processes can sometimes elicit negative responses, and adjusting their levels could enhance beer flavor.

Human Touch in Beer Brewing

To validate their findings, the researchers crafted a beer using the AI-suggested chemical ratios and had it tested by volunteers. Results showed that the AI-guided beer received positive feedback on both its sweetness and perceived richness.

However, the researchers emphasized that AI serves as an advisory tool, and skilled brewers are still essential in the creation of flavorful beers. AI does not currently replace human expertise in the brewing process.

"These AI models can predict and suggest chemical changes that could optimize the quality and flavor of the beer, but implementing these changes still relies heavily on the brewer, starting from the recipe and brewing process," said Verstrepen.

"Therefore, AI cannot fully replace humans in creating delicious beers yet, but we may see AI-generated and brewed beers in the future," he added.
